For this pickle, the mango skin is fully removed and the stone (seed) is taken out before processing. Only the edible mango flesh is cut into chunky pieces, which makes this pickle rich in mango content and gives it a premium, authentic texture.

The preparation follows time-tested methods inspired by Bihar’s household recipes. The mango pieces are mixed with aromatic spices and mustard oil, then allowed to mature naturally through sun fermentation. This slow process enhances the flavour, bringing out a bold balance of spicy, tangy, and sharp raw mango taste that pickle lovers enjoy.

Because the peel and seed are removed before cutting, nearly 30–40% of the raw mango is discarded during preparation.
